Vegan Dairy Free Gluten Free bread


Here in the Cayman Islands where I live, we are blessed to have an abundance of Palm Trees.



That means Coconuts!

Coconut Water, Coconut Milk and for the first time I tried Coconut Yogurt at the weekend. Honestly? I wasn’t a fan!

Waste not want not. I made a coconut oat bread using simple ingredients I had at home. It is delicious toasted spread with butter, nut butter, jam and avocado!

You will need:

320g Oats

40g Coconut Flour (optional)

1 tbsp Mixed seeds

1 Tbsp Agave or Honey or Maple Syrup

100ml Almond Milk (less or more depending on consistency)

500ml Coconut Yogurt ( I have made this before with regular yogurt and I don’t see why you couldn’t use Soy or Almond!)


The method? It couldn’t be easier! Mix everything together in a big bowl. Transfer to a non-stick baking tin and bake for an hour at 180 Celsius or 350 Fahrenheit.

Cool before cutting as it is qiute crumbly.
