This morning I did some Saturday morning baking.
I was delighted when I found a recipe for Vegan Lemon Cake on the BBC Good Food website.
Better still, it turned out amazing. I was sure that I would have to retire from baking without eggs and dairy but I was wrong. I made it into a Drizzle Cake by using Mary Berry’s Drizzle recipe of just sugar and water.
If you want a crunchy top, I suggest using the juice of half a lemon and 200g of sugar. When the cake is cooling, make holes using a skewer and pour the drizzle mix in.
Delicious! I can’t get enough lemon so I had my slice with lemon tea! (I had more than one slice).
